Rajasthani Mutton Gravy

 

Laal Maas/Laal Maans is a very famous dish in Rajasthan, India. Unlike southern Indian states mutton curry/gravy, it’s prepared in a sauce of curd/yoghurt and hot spices. It makes unique and delicious because mutton cooked in ginger garlic paste, yoghurt, turmeric and more. We must use dry red chilli (Preferably Kashmiri red chillies ) to make it more authentic. This dish is mostly prepared in festival/special occasions in Rajasthan. They would prefer to have this with Baati, Hot phulka or Steamed rice.

Rajasthani Mutton Gravy/Laal Maas preparation with step by step photos and a quick video.

Ingredients
  • Mutton -½ kg (cut into pieces with bones)
  • Cinnamon stick (Pattai/Dalchini) - ½ inch
  • Cloves (Karampu/Lavang) - 2
  • Poppy Seeds (Khus Khus/kasa kasa) -2 tsp(paste)
  • Cardamom pods -2
  • Black pepper -½ tsp
  • Jeera - 1tsp
  • Ginger-Garlic paste - 1 tsp
  • Curd (Dahi / Yogurt)- ¼ th cup
  • Tomato puree -½ cup
  • Shallots (Small onion )- ¼ th cup (paste)
  • Red Chilli powder -1 tsp
  • Coriander powder -2 tsp
  • Salt - to taste
  • Oil - 1 tbsp
  • Ghee - 1 tbsp
Directions
  • Step 1 Take a pan and add cinnamon stick (Pattai/Dalchini)
  • Step 2 Add cloves (Karampu/Lavang)
  • Step 3 Add cardamom pods and saute it well
  • Step 4 Add jeera
  • Step 5 Add black pepper. Saute it until turns aromatic and keep it aside
  • Step 6 Blend to a fine powder and keep it aside
  • Step 7 Take a heavy bottom pan and add oil
  • Step 8 Add ghee
  • Step 9 Add small onion paste and saute it well.
  • Step 10 Add ground garam masala powder.
  • Step 11 Add ginger garlic paste and saute it until raw smell leaves.
  • Step 12 Add red chilli powder.
  • Step 13 Add coriander powder and saute it well.
  • Step 14 Add ground Poppy Seeds (Khus Khus/Kasa Kasa) paste and saute it well.
  • Step 15 Add tomato puree and saute it well.
  • Step 16 Add cleaned/washed mutton pieces and saute it well.
  • Step 17 Add curd and saute it well.
  • Step 18 Add salt to taste and saute it well.
  • Step 19 Add water and adjust the consistency.
  • Step 20 Cover the lid and cook for 3 whistles.
  • Step 21 Once pressure releases and mix it well.
  • Step 22 Serve it hot with rice and Indian flatbread.

17. Add curd and saute it well.

20. Cover the lid and cook for 3 whistles.
