Kashi halwa/Ash gourd halwa is a very famous and classic dessert recipe in Karnataka. Kashi halwa hails from the Udupi cuisine and you could find this dessert on many of the Udupi hotels. The first time, I had this recipe in a hotel hall image – Malleswaram(Bangalore) and they are the best. I would recommend not to use any artificial colors since saffron can do the magic. Do not use a food processor for grating ash gourd. If you do, it will turn in to paste and you can’t get the crunchy effect. If you are a sweet-toothed person, you could add a scoop of vanilla ice cream to warm Kashi halwa to make this dessert to the next level.

Ingredients
  • Ash gourd (kumbala kai)-150gm, grated
  • Sugar -150gm
  • Saffron (Kesar)-¼ tsp
  • Ghee / clarified butter -4 tbsp
  • Cashew (Kaju)- 10
  • Cardamom powder- ½ tsp
  • Salt - a pinch
  • lemon juice -¼ tsp
Directions
  • Step 1 Take ash gourd and remove the skin
  • Step 2 Grate ash gourd
  • Step 3 Strin the ash gourd and squeezes it well and keep it aside
  • Step 4 Add ash gourd juice and boil for 2 minutes
  • Step 5 Once it boiled add grated ash gourd and mix it well
  • Step 6 Cook for 6 minutes or till the ash gourd is cooked completely and water is absorbed.
  • Step 7 Add Sugar and mix it well until the sugar dissolves completely.
  • Step 8 Add saffron and mix it well
  • Step 9 Boil for 2 minutes or more till the sugar syrup thickens.
  • Step 10 Add a pinch of salt and mix it well
  • Step 11 Add ghee and mix it well until the ghee starts to release from sides.
  • Step 12 Add cardamom powder and mix it well
  • Step 13 Add lemon juice and mix it well
  • Step 14 Take a Kadai and add ghee
  • Step 15 Add cashews and fry it until golden brown
  • Step 16 Pour the fried cashews to the ahs gourd halwa
  • Step 17 Serve Kashi halwa/ash gourd halwa hot or refrigerate.

1. Take ash gourd and remove the skin
