Kerala Valsan | Elayappam Recipe | Ela Ada Recipe preparation with step by step photos and a quick video.

Ingredients
  • Jaggery (gud) - 1cup
  • Coconut -1 cup grated
  • Cardamom powder -¼ th tsp
  • Water - 1 tbsp
  • For Dough:
  • Rice flour - 1½ cup
  • Water -1 cup
  • Ghee (clarified butter) -1 tsp
  • Salt -½ tsp
Directions
  • Step 1 Stuffing Preparation :
  • Step 2 Take a pan and add jaggery
  • Step 3 Add water and mix it well
  • Step 4 Saute for 5 minutes or until jaggery melts completely.
  • Step 5 Add grated coconut and mix it well
  • Step 6 Add cardamom powder and mix it well until stuffing turns sticky and aromatic.
  • Step 7 Rice Dough Preparation:
  • Step 8 Take a bowl and add rice flour
  • Step 9 Add salt
  • Step 10 Add ghee
  • Step 11 Add hot water and mix using a wooden spatula/spoon.
  • Step 12 Once the mixture cools down a bit, knead with your hands to make a soft dough and keep aside.
  • Step 13 Warm the banana leaves. So that it will be easy to fold.
  • Step 14 Take a piece of Banana leaf and add ghee and grease the leaf
  • Step 15 Take a ball sized dough and flatten over a banana leaf.
  • Step 16 Add a tbsp of prepared stuffing and spread uniformly.
  • Step 17 Fold half and seal the sides by pressing gently.
  • Step 18 Place in a steamer and steam for 15 minutes or until it is cooked completely.
  • Step 19 Once done, serve warm or at room temperature.
  • Step 20 Ela Ada /Valsan dessert will make Onam sadhya even better.
