The basmati rice with chicken and vegetables is a combination you will make over and over! This fried rice is super easy to whip up and perfect for lunchboxes or quick dinner. Soy sauce is a major element in this recipe which gives it a lovely flavor. while buying soya sauce chose one that is labeled as naturally brewed or traditionally brewed. Otherway of making soya sauce uses harsh chemicals which may cause serious risk to health. I had used organic soya sauce or at least the one made from non-GMO soy. Chicken and rice with vegetables in the most delicious sesame and soy sauce! For the chicken, you have two options. You can either cut the chicken into thin strips and then stir fry, or cook it separately. I recommend the second option as it keeps the chicken moist and soft. Ajinomoto or MSG lends a different taste and flavor to the rice that dominates every other ingredient that is used. Due to the controversies associated with it, I do not use it in any of my recipes.

Other variations are straight forward,

If you want to make egg fried rice, just avoid chicken
If you want to make veg fried rice, you can ignore both egg & chicken in the recipe.

Restaurant Style Chicken Fried Rice | Easy Chicken Fried Rice preparation with step by step photos and a quick video.

Ingredients
  • Boneless Chicken -250 gms.
  • Basmati Rice -1½ cup, soaked 20 minutes
  • Eggs- 3
  • Garlic -6 cloves
  • Salt - to taste
  • Pepper powder- ½ tsp
  • Soya sauce -1 tsp
  • White Vinegar- 1 tsp
  • Shredded cabbage- 1 cup
  • Carrots - 1 cup, julienned
  • Capsicum - 1 cup, julienned
  • Spring onion- 3 tbsp
  • Refined oil- 3 tbsp
Directions
  • Step 1 Take a large vessel and add water and let it bring to boil. Add soaked basmati rice
  • Step 2 Add salt
  • Step 3 Add oil and mix it well
  • Step 4 Cover it for 10 minutes or until rice is cooked completely. Drain it off and keep it aside.
  • Step 5 Take a pan and add oil
  • Step 6 add beaten egg and mix it well
  • Step 7 Scramble it on medium heat and keep it aside
  • Step 8 Take a pan and add oil
  • Step 9 add finely chopped garlic and stir it well
  • Step 10 Add the chicken pieces and stir fry on high heat for 3 minutes or until they turn white.
  • Step 11 Add chopped spring onion white parts and stir it well
  • Step 12 Add julienned carrots
  • Step 13 Add julienned peppers and stir well for few minutes on high heat
  • Step 14 add shredded cabbage and stir it for another 1 min on high heat.
  • Step 15 Add the cooked rice and mix it with the chicken and veggies.
  • Step 16 Add pepper
  • Step 17 Add dark soya sauce
  • Step 18 Add vinegar
  • Step 19 Add salt to taste toss and fry it for 2 mins on medium heat.
  • Step 20 Add the scrambled egg and mix it well
  • Step 21 Add spring onion greens and mix it well
  • Step 22 Serve chicken fried rice hot

1.  Take a large vessel and add water and let it bring to boil. Add soaked basmati rice

4. Cook it for 10 minutes or until rice is cooked completely. Drain it off and keep it aside.

7. Scramble it on medium heat and keep it aside
