Carrot cakes always remind mild sweetness and spongy. I just wanna try carrot cake at home even though I don’t have perfect rectangle mould. The natural sweetness and colour of carrots make the cake very unique and different from other cakes. I would recommend to peel off the carrots before grating it. Make a limited quantity and better to consume the cake on the same or next day. Because it just lasts one to two days at normal room temperature.

How to Make Carrot Cake? Carrot Cake Recipe preparation with step by step photos and a quick video.

Ingredients
  • Grated carrot - 1 ½ cup
  • Eggs - 2
  • Maida ( plain flour / all-purpose flour) - 85 gm (slightly less than 1 cup)
  • Baking Powder - 1 tsp
  • Baking soda - ¼ th tsp
  • Powdered sugar - 100 gm (¾ th cup)
  • Oil - 60 gm (½ cup)
  • Powdered cinnamon(Pattai/Dalchini) -¼ tsp
  • Icing sugar - 2 tbsp (optional)
Directions
  • Step 1 Preheat oven to 180 degree celsius. Grease the pan with oil and line with parchment paper, then grease the parchment paper. Parchment paper helps the cakes seamlessly release from the pans. keep it aside
  • Step 2 Take a bowl and add eggs. Beat it well
  • Step 3 Add powdered sugar and beat it well until eggs & sugar together frothy
  • Step 4 Add oil gradually, beating all the time
  • Step 5 Add flour
  • Step 6 Add baking powder
  • Step 7 Add cinnamon powder
  • Step 8 add baking soda and sieve well
  • Step 9 Add grated carrot and beat at a low speed
  • Step 10 Transfer the batter to the cake pan.
  • Step 11 Pat the dish gently to even out the surface
  • Step 12 Bake the cake at 150 degree celsius or 350 degrees Fahrenheit for 40 minutes.
  • Step 13 Insert a toothpick at the centre and see if it comes out clean. Else bake for 5 more minutes.
  • Step 14 Sift icing sugar on the top of the hot cake, if desired.
  • Step 15 Allow the cake to cool down completely. Later, cut into slices and serve.
  • Step 16 Homemade carrot cake is ready for serving.
